Co-fermentation of these varieties together serves to stabilize and brighten the colour of the final wine and deepen the flavour profile.

The Shiraz and Viognier were picked and fermented together in open top fermenters with heading down boards. The wine was matured in a mixture of French and American medium toast oak barrels for 24 months.
