The 2023 growing season was cool throughout, ensuring slow, even ripening and flavour development.
Sourced from the Lobethal area. The vines are at high altitude with a south facing slope ensuring great flavour and acid retention through ripening.
The fruit from the Schuberts Rd Vineyard was picked in the cool of the night to retain freshness. After crushing and pressing the juice was cold stabilised and racked before yeast was added.
The ferment was maintained at cool temperatures for approx. 3 weeks before being clarified and bottled to retain freshness.
