Linguine Con Granchio & Grüner Veltliner

Serves: 4 people

  • 500 g linguine
  • 60 ml olive oil
  • 40 g unsalted butter
  • 500 g blue swimmer crab meat
  • 2 red cayenne chilies, finely chopped
  • 2 garlic cloves, crushed
  • ½ cup parsley, roughly chopped
  • ½ cup white wine
  • 30 ml brandy
  • 2 x 400g tins crushed tomatoes
  • 300 ml thickened cream
  • Sea Salt, to serve
  • Ground Pepper, to serve
  • Parmesan, to serve



  1. Bring a large pot of salted water to the boil and add the linguine. Cook until al dente.
  2. Meanwhile, heat the olive oil and butter in a deep-dish pan. Add the crab, chilli, garlic and parsley, cook for 1 minute.
  3. Add the white wine and brandy, cook until this evaporates. Add the crushed tomatoes and cream, then simmer for 10 - 15 mins.
  4. Add cooked pasta to the sauce mixture, and season to taste with salt and pepper.
  5. To serve, top with some shaved parmesan and parsley sprigs.
